Week of Jan 7 – Chicken Noodle Soup, Baked Potato, Portobello Burger, Tacos, Casserole, Saag, Shepherd’s Pie

Sunday: Chicken Noodle Soup – From our beloved Lucky Peach book.

Monday: Baked Potato – 1 hour baked potato topped with cheese, mushroom and leek, chickpeas, peas, corn with garlic salt and truffle oil

Tuesday: Portobello Mushroom Burgers with Sweet Potato  and Zucchini Fries – 30 min roasted portobello mushrooms topped with cheese, guacamole, tomato, lettuce, ketchup and mustard. Served with sweet potato fries a la Mark Hartman from NY Times ( and baked zucchini fries (

Wednesday: Fake Chorizo Tacos– We have leftover vegetarian chorizo. Will also add black beans, avocado, salsa, sour cream on corn/wheat tortillas.

Thursday: Roasted Cauliflower Chickpea Mac and Cheese Casserole – Trying this recipe –

Friday: Saag Chickpea – With rice.

Saturday: Vegetarian Shepherd’s Pie – We have a recipe from Hello Fresh we use –
